the & sign in a text file

I have created a text.txt file for my scroll winows.

In the text file there are & signs, like so...
    .
    &biotxt2=bio text
    &biotxt3=bio text
    &biotxt4=bio text
    &biotxt5=bio text
    &biotxt6=Mr. Ganiban

they are used to seperate the text from one link to another. The question is how do I use the & sign and NOT have it seperate the text in the scroll window. The point being that the character needs to used in the text as an "and".

Make sense? Is this possible or does "and" need to be used instead of the & sign?

& is an operator, and can not be used as far as I know...

using "and" is a better way to go,more professional any way.
