    What's for lunch, today?



    So, I finally got a Presto "Fry Daddy" deep fryer. It's really nice, so to celebrate, I made a taco salad for lunch.

    Ingredients:
    • 1 bag of "10-Minute" Success Rice (or any other regular white rice)
    • 1 packet of taco / fajita seasoning (dry seasoning mix)
    • 1 large can of plain pinto beans.
    • 1 chopped onion
    • Halved, whole pitted black olives
    • Shredded lettuce
    • 1 jar of mild taco sauce
    • 1 bag of small flour tortillas


    Directions:
    • Start out ny preheating your deep fryer. Then, I made the rice first so it could have time to cool. If using Success Rice, just follow the directions on the packet. I cut the bag open and followed the directions for making it just a cup or two of water instead of submerging the bag. After the rice is cooked, add taco / fajita seasoning to taste and then set it aside.
    • After the oil has preheated, I have a special thing that you use with the deep fryer called a taco shell maker. I don't know how you'd make them without one. If you have one, or know of an alternative method, go ahead and fry the tortilla. I keep my tortillas at room temperature to prevent the oil from getting out of hand. After it's made (10 seconds), slowly lift it out and let it cool / drain before completely removing it (30 seconds) then move it to some paper towels to dry off / finish cooling.
    • Next, when the shell has had enough time to cool off / remove excess oil, fill the bottom of the bowl with rice. Then put some lettuce shreds ontop of that, pinto beans ontop of that, chopped onion, taco sauce, and then olives to finish it off.


    It's actually really quick and easy to make, and it makes a perfect lunch portion.

    Lol, no tupperware needed today. I actually made two. The first one was to test if it was even going to taste good, and the second one was for the picture to put up here, so I put some extra TLC in one above if it's any consolation.

    I make Taco salads quite often. If you want an alternate method that almost anyone can do, take your tortilla and spray it on both sides with the aerosol vegetable oil, place it on a plate and put little holes in it with a fork to avoid air bubbles then put it on tall and narrow glass bowl in the over at 350 degrees for 8-10 minutes. Works wonderfully. You can also buy kits that already have the holes and oil on the tortilla and comes with cardboard bowl things that the tortilla shapes around but they cost quite a bit more.

    I had a slither of pâté on a piece of bread. Same goes for breakfast. Life don't get much better than this people. The tap ice-cold water beverage complemented the stale, molding bread perfectly.

    @Jasonsplace: Nice! I'll have to try that method next time. It sounds like it would be a bit healthier, too.

    Hahaha, Krona. . Actually, the cold tap water sounds really good.

    At least you stuck with the Mexican theme.

    Nordberg, is that "slice" as in the soda, or slices of something like pizza? If it's the former, I'll let you use the bathroom first before you reply. That's a hell of a lunch.
