I've Never been a muddy fan either. Couldn't tell you why mind.
I think the key to getting into the blues is to get a couple of good compilations. Most of the best blues tunes were by artists who maybe only recorded one or two sides, pre-lp days.
Try to grab the soundtrack to Scorsese Presents the Blues. I think it comes in both a one disc or two disc set.
Howlin' Wolf - CV Wine... top five song of all time for me for sure.

My first turn on to blues was Black Snake Moan, this looks like a great list to start from, thanks guys.

gerbs is on point regarding which style of the genre you'll be into. Personally, i'm a fan of Big Momma Thorton...lady can bring down a jetliner with her voice. Just melts your body.
Stay the hell away from Clapton's blues sessions and anything after 1980 for BB King. Pure rubbish.
I HATE the modern blues guys like Johnny Lang or Kenny Wayne Sheppard. They're just ripping off some of the classics like Stevie Ray Vaughan (my personal guitar idol) Clapton, Hendrix and others. Nothing original about any of them.
A good sample of the blues i've been listening to lately...try searching for 'folk blues classics' on iTunes.
Great artists such as James Cotton, Walter Trout, Keb' Mo', Taj Mahal, Sonny Boy Williamson, and even Woodie Guthrie are absolutely rockin. True blues at it's finest.
And if you like the soundtrack from Black Snake Moan (which is cool) try the soundtrack from 'Death Proof' by Tarantino.
