Matters on what kind of sound you're looking for. Some blues is so old school, you'd have to be in love with the genre to like it. I mean, it' old, old school; analogous to Hank Williams Sr. (the yodeling, et al) to Hank Williams Jr. (more progressive).
I've always been a fan of John Lee Hooker - go find "Boom Boom". If anything, that's a bit uptempo. But his voice, ability to play... he's great.
I'm also a fan BB King - seen him a ton of times. Again, more uptempo usually. Thrill is Gone is very well known... you've invariably heard this.
For old, old, old school... Robert Johnson. His whole background is around his deal with the devil. Wicked slide guitarist though.
This is where I usually get in trouble. I truly didn't like Muddy Waters. Yes, he's good, but something about his more well known music turned me off when I was first introduced to blues as a kid. Mannish Boy - EVERYBODY knows this song. Then I heard a version he had done live in a club from a bootleg cassette... yeah, he played the LIVING **** out of a guitar. A solo like no other. And I went backwards. Got My Mojo Working, Rolling Stone... the earlier recordings are better.
If you want down home... non-Pop blues, don't look for ZZ Hill. Way more pop than anything else. But look for Mississippi Delta Blues. I can't name one dude at all though that sticks out. Perhaps Howlin' Wolf.
