    Which version are you using?
In Flash4 when you go to select a color, there is a little button at the top, and when you press it, it goes to a window, and there is a tab on top that says 'Gradient'.

In Flash5, you can go to Windows>Panels>Fill and select the gradient settings.

In Flash 5, you first want to go to the Fill panel and select the color chip you want to modify, then you need to go to the Mixer panel and change the settings there. If you want to save the new color chip, go to the arrow that opens the drop-down menu in the top right corner and choose "add swatch". If you want to save the resultant gradient, do the same thing in the Fill panel, but choose "add gradient". Be careful not to select another gradient with the the selection tool before saving the new gradient, or it will be lost.
