Just shoot against a well lit white backgound.
Uh, no that won't work.
You have to use green or blue screen to get that chroma key effect.
1. Shoot a person in a green/blue screen environment (yes, with really good lighting)
2. Import the video into your editor like After Effects or PRemiere etc.
3. Use the chrome key effect to edge out the surrounding blue or green
What you are left with is this effect of someone floating in totally perfect #ffffff white space. You do have to learn to tweak this to get rid of fuzzy edges (which is why good lighting is required).

The example video had just a white background, in which there would be no need to replace the background.
It would be another story if you want to add shadows or new backgrounds later.
the shadow he has there IS an added shadow. Having used green and blue screen, you can kind of tell when it's used and when it's not. It's very hard to get that perfect match of web white with video white ;)
Thats way to clean to just be shot on a white wall. Its definatly done with a screen

yeah, that was shot on green screen and the shadow can be added with after effects or quake. I just got done doing some work like this. Went out to a green screen with a production crew and shot some video for a company I work for. Chroma key it out and preserve the alpha for conversion to flv. I'm not real savvy on the shooting end of it but I did the flv conversion and deployment.
As stiff as that guy is you could draw the shadow with flash :)
