Manga is usually published in weekly volumes on tinted newsprint paper. Each volume may have 10 different "titles" or stories that are featured, and each title will have 20-30 pages of comics. Thusly, each weekly manga volume can easily have 200 pages of comics. Americans refer to them as "phone books" because they are so thick. Each title in the volume is written/drawn by different artists or teams, so that there is a variety of different styles.
Typically, the volumes will be bundled to appeal to a particular market segment. Shonen Jump for instance, is a volume aimed at adolescent boys, so it features action/adventure/fighting/sports stories, PG rated sex, etc. Other manga volumes are aimed at young girls (romance/growing up stories), or young adult men (sex/gangster/business stories), or one subject matter (sports, food, historic dramas).
The volumes are printed in black on newprint. Each story is printed on a different tint of paper to make it easier to find---light yellow, green, red, blue, tan, etc. Each week, one or two of the stories are showcased, so at the beginning of the volume, that story is printed in FULL COLOR for several pages, followed by tinted half-tone pages instead of just b/w. So it's a treat to see your favorite characters in full color every once in a while.
These weekly volumes are cheaply produced, and intended to be tossed after one reading. For collectors, the stories are reprinted in paperback-sized editions by each story title. A paperback manga volume is compilation of 6-8 weeks of storyline. If a story runs for a year, then you'd have several volumes printed of that title.
Manga stories usually do not go on forever like Superman or The X-Men. Most run a few years to a definitive conclusion of the storyline, then the artist/writer produces a totally new story with new characters, etc.
For instance Rumiko Takahashi created Urusei Yatsura (comedy), then Maison Ikkoku (romance), then Ranma 1/2 (comedy), etc...all separate and distinct stories told in comic format. The beauty and appeal of many mangas is that they are stories with a beginning, middle, and END. You get to read about characters that live and grow. Of course there are silly comedies, and endless good/bad battle stories, too!
Hope this fills in a few of the blanks.
