Is there a way to get the linear gradient on a fill to go up and down instead of horizontal?

Yes, go to the transform menu. Shift and rotate graidient Fill will allow you to do this.

Maybe you can answer my open lines question. In the practice animation below, I drew the kitty's paws with ellipses and then used the not closed option in the properties box to make his toes connect to his paws. In effect, I was erasing a segment of the ellipse. However, using the not closed option made each one open in exactly the same place. Is there a better way to erase a section of a shape's outline?

The last segment relative to the order that the segments were originally drawn is the one that is not drawn when the 'not closed' option is selected. At this time you cannot select an arbitrary segment. For your paws, you can flip them horizontally.

Point by Point open shape works also.
