Best option for a "green screen"?

I need to produce a video of a couple individuals speaking, and I'd like to cut out the background. What's the best method for this?

Obviously, I'd need a single color backdrop, but what software is needed to produce a video with a transparent background with good enough antialiasing that'll export to FLV?

    Sorry, I'm a video newb!

jordz84..thanks for the link. I do a bit of chroma keying at times and there were a couple of good tips in that article that I'll try next time.

If you use a Mac, Final cut is pretty good and easey for editing and most of the keying. From there its on to Cleaner and Sorenson Squeeze for exporting.
