I am using the gradient fill feature, and can get it to fill from side to side... but how can I get a gradient fill from top to bottom? When I rotate, it stays side to side (horizonal gradient fill)... I need it to fill vertically from top to bottom.

Also - it would be a nice feature to be able to offset the radial gradient point to allow the moving of the radial fill center point.

The Transform- Shift Gradient Fill does this- I went back and double checked to be sure.

Do your fill then select the shape and then hit Transformations>Shift Gradient Fill. The center point, when hovered over, will change your tool from a rotate tool to a move tool. Once you have the Move Tool then you can change the center point- even with a radial fill.
